Home cured duck egg yolks for the Mooncake are almost ready!

Team Rachel’s is getting ready to make Mooncake, “Yuè Bĭng” (月餅), to celebrate the Mid-Autumn Festival on 15th September 2016.

We have been curing the duck eggs for few weeks to get the egg yolk to form to the firm honey texture that will melt in your mouth.  It will be ready in next few days, so we will start making and baking mooncake soon !

Rachel’s traditional filling Mooncake月餅range are:

  • Double duck egg yolk in Lotus Seed Paste, 雙黃蓮蓉月饼
  • Lotus Seed Paste, 蓮蓉月饼
  • Red Bean Paste, 豆沙月饼

We also have mini mooncake filled with:

  • Lotus Seed Paste, 迷你蓮蓉月饼
  • Red Bean Paste, 迷你豆沙月饼

Snow Skin Mooncake (冰皮月餅) and mini version of Snow Skin Mooncake (迷你冰皮月餅) will also be available.

The filling for the Snow Skin Mooncake in traditional size are:

  • Double duck egg yolk in Lotus Seed Paste, 雙黃蓮蓉 冰皮月饼
  • Double duck egg yolk in Custard, 雙黃奶黄冰皮月饼

For mini version of Snow Skin Mooncake, we make them in three different fillings:

  • Lotus Seed Paste, 迷你冰皮蓮蓉月饼
  • Red Bean Paste, 迷你冰皮豆沙月饼
  • Custard, 迷你冰皮奶黄月饼

Below is a little story about the mooncake

Mooncake is a traditional Chinese dessert or tea cake typically eaten during the Mid-Autumn Festival, Zhōngqiū Jié (中秋節). It is celebrated on the 15th day of the 8th month on lunar calendar (八月十五).

The Mid-Autumn festival is for lunar worship and moon watching, when mooncakes are regarded as an indispensable delicacy. Mooncakes are offered between friends or on family gatherings while celebrating the festival. The Mid-Autumn Festival is one of the four most important Chinese festivals.
